Spanish Garlic Soup

Ingredients

6 Cups Chicken Or Vegetable Broth

1 Head Garlic, Peeled And Minced

1/4 Cup Olive Oil

2 Slices Stale Bread, Cut Into Small Cubes

1 Tsp Smoked Paprika

Salt To Taste

Black Pepper To Taste

1 Tsp Ground Cumin

 

2 Eggs

Fresh Parsley, Chopped (Optional)

 

Step: 1

In A Large Pot, Heat The Olive Oil Over Medium Heat. Add The Minced Garlic And Sauté For 2-3 Minutes Until Fragrant.

Step: 2

Add The Bread Cubes And Sauté For Another 2-3 Minutes Until Golden Brown.

Step: 3  

Add The Smoked Paprika And Ground Cumin To The Pot And Stir Well.

 

Step: 4  

Pour In The Chicken Or Vegetable Broth And Bring To A Boil.

Step: 5  

Reduce Heat To Low And Simmer For 10-15 Minutes, Until The Bread Has Softened And The Soup Has Thickened Slightly.

Step: 6

In A Small Bowl, Beat The Eggs Together Until Frothy.

Step: 7

Slowly Pour The Beaten Eggs Into The Soup While Stirring Constantly. This Will Create Ribbons Of Cooked Egg Throughout The Soup.

Step: 8

Remove The Pot From The Heat And Season With Salt And Black Pepper To Taste.

Step: 9

Ladle The Soup Into Bowls And Garnish With Chopped Parsley, If Desired.
