Sooji Vegetable Pancake

Ingredients

1 Cup Sooji (Semolina)

1/2 Cup All-purpose Flour

1/2 Cup Yogurt

1/2 Cup Grated Vegetables (Carrots, Zucchini, Bell Peppers, Etc.)

1/4 Cup Chopped Onions 2 Green Chilies, Finely Chopped (Optional)
1/4 Cup Chopped Coriander Leaves 1 Teaspoon Ginger Paste
1/2 Teaspoon Cumin Seeds 1/2 Teaspoon Turmeric Powder

1/2 Teaspoon Red Chili Powder (Adjust According To Your Taste)

Salt To Taste

Water, As Needed

Oil For Cooking

 

Step: 1

In A Mixing Bowl, Combine The Sooji, All-purpose Flour, Yogurt, And Water. Mix Well To Form A Smooth Batter. Let It Rest For 15-20 Minutes.

Step: 2

Meanwhile, Prepare The Vegetable Mixture. In Another Bowl, Combine The Grated Vegetables, Chopped Onions, Green Chilies, Coriander Leaves, Ginger Paste, Cumin Seeds, Turmeric Powder, Red Chili Powder, And Salt. Mix Everything Well.

Step: 3

After Resting Time, Add The Vegetable Mixture To The Sooji Batter. Mix Well To Combine All The Ingredients. Adjust The Consistency Of The Batter By Adding More Water If Needed. The Batter Should Be Thick But Pourable.

 

Step: 4

Heat A Non-stick Pan Or Griddle Over Medium Heat. Drizzle A Little Oil And Spread It Evenly On The Pan.

Step: 5

Pour A Ladleful Of The Batter Onto The Pan And Spread It Gently To Form A Circular Pancake Shape.

Step: 6

Cook The Pancake On Medium Heat Until The Bottom Side Turns Golden Brown. Drizzle A Little Oil On The Top And Flip It Over Carefully Using A Spatula.

Step: 7

Cook The Other Side Until It Also Turns Golden Brown And Crisp. Remove The Pancake From The Pan And Place It On A Plate.

Step: 8

Repeat The Process With The Remaining Batter, Adding More Oil As Needed, Until All The Pancakes Are Cooked.

Step: 9

Serve The Sooji Vegetable Pancakes Hot With Your Favorite Chutney, Yogurt, Or Sauce.
