Baobab Energy Bars

Ingredients

1 Cup Dates, Pitted

1/2 Cup Almonds

1/2 Cup Cashews

½ Cup Goji Berry

1/4 Cup Baobab Powder 1/4 Cup Shredded Coconut
1/4 Cup Dried Cranberries 2 Tablespoons Chia Seeds
2 Tablespoons Honey (For Sweetness, Optional) 1/4 Teaspoon Vanilla Extract

Pinch Of Salt

 

 

 

Step: 1

Place The Dates In A Bowl And Cover Them With Warm Water. Let Them Soak For About 10 Minutes To Soften.

Step: 2

In A Food Processor, Add The Almonds And Cashews. Pulse Until They Are Finely Chopped, But Be Careful Not To Over-process And Turn Them Into A Paste.

Step: 3

Drain The Dates And Add Them To The Food Processor Along With The Baobab Powder, Shredded Coconut, Dried Cranberries, Chia Seeds, Honey (If Using), Vanilla Extract, And A Pinch Of Salt.

 

Step: 4

Process The Mixture Until It Starts To Come Together And Forms A Sticky Dough. You Should Still See Small Pieces Of Nuts And Dried Fruit For Texture.

Step: 5

Line A Baking Dish Or Tray With Parchment Paper. Transfer The Mixture Into The Dish And Press It Down Firmly To Create An Even Layer.

Step: 6

Place The Dish In The Refrigerator For At Least 1 Hour To Set And Firm Up.

Step: 7

Once The Mixture Has Set, Remove It From The Refrigerator And Cut It Into Bars Or Squares Of Your Desired Size.

Step: 8

Store The Baobab Energy Bars In An Airtight Container In The Refrigerator For Up To 2 Weeks. Alternatively, You Can Wrap Them Individually And Freeze For Longer Storage.
