In A Small Bowl, Combine The Curry Powder, Ground Cumin, Ground Coriander, Turmeric, And Cayenne Pepper. Stir The Spice Mixture Into The Pan With The Onion, Garlic, And Ginger. Cook For About 1 Minute To Toast The Spices And Release Their Flavors.

Pour In The Diced Tomatoes (With Their Juices) And Coconut Milk. Stir Well To Combine All The Ingredients.
